Job Description:

Great Central Brewing Company (GCBC) is looking for an experienced and talented Head Brewer for our craft-dedicated brewing facility in downtown Chicago.

The Head Brewer will be a senior leader of the brewery’s production team, and reports directly to the Brew Master.  Responsible for overseeing daily brewing and cellaring operations in a safe and efficient manner, the Head Brewer will play a key role in the achievement of department goals.

Job Requirements:

Experience & Requirements
  • 5+ years of brewing experience, with a history of progressive advancement in leadership or management positions 
  • College degree and certification from an accredited brewing program required. A focus in microbiology, food science, chemical engineering, or degree in Brewing Science a plus.
  • Experience operating and managing an automated 30+ BBL system or larger running Braumat, beraBREW or similar technology
  • Experience installing and maintaining 5S and 6 Sigma systems
  • Strength to lift, carry, or move over 55+ lbs. regularly and maneuver 175 lb. kegs repeatedly 
  • Ability to stand 8–10 hours per day, walk, stoop, bend, twist, kneel, reach over head and use hands 
  • Ability to climb ladders and work at varying heights
  • Ability to prioritize safety and carry out safety standards while working in various conditions (i.e. with hazardous chemicals, handling of hazardous materials, exposure to hot fluids and steam, exposure to pressurized vessels and transfer lines). 
  • Comfort with a flexible work schedule, including possible nights and weekends 
Duties & Responsibilties
  • Reports directly to the Brew Master
  • Oversee production of a 2-shift brewing team
  • Work collaboratively with the Brew Master & Plant Manager to carry out the daily production needs
  • Meet all QC/QA standards and practices
  • Ensure brewing staff is following all SOPs
  • Coordinate ingredient purchases and logistics for all brewing production needs
  • Manage brewing inventory
  • Optimize production of client and Great Central recipes
  • Organize and rollout 5S and 6 Sigma practices
  • From time to time, execute brews, dry-hopping, cellar work, malt handling
  • Train all apprentice brewers

  • Strong mechanical and problem-solving aptitude

  • Technical and practical knowledge of brewery operations, including but not limited to:
    • Cellaring, cleaning and maintenance best practices, SOP development and enforcement
    • Yeast management, fermentation theory/practice
    • Scheduling and efficiency metrics
    • Inventory and supply chain management, including materials ordering and logistics
    • Quality control and lab procedures such as: cell counting/viability testing, D.O., CO2 and packaged air testing, gram staining and microbiological analysis
    • All aspects of analysis, bitterness, color and alcohol percentage
    • Working knowledge of HVAC, plumbing, mechanical and electrical systems, welding and fabrication, with mastery of any a plus
    • Working knowledge of safety and legal compliance requirements and enforcement
